Marinated Stuffed Shrimp
Ingredients:
1 pound unpeeled, large fresh shrimp
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon freshly ground pepper
2 tablespoons olive oil
1 (8 ounce) round smoked Gouda cheese
4 ounces prosciutto or country ham, thinly sliced
1/2 cup olive oil
1/4 cup white balsamic vinegar
2 tablespoons chopped fresh rosemary
1/8 teaspoon ground red pepper
Directions:
- Peel shrimp, and devein, if desired. Make a deep slit down back of each shrimp, cutting to, but not through, inside curve of shrimp.
- Saute shrimp and next 3 ingredients in 2 tablespoons hot oil in skillet 3 minutes or until shrimp turn pink; cool. (To make ahead, cover and chil until ready to assemble, up to 24 hours.)
- Cut cheese into 24 (1-inch) cubes. Cut prosciutto into 24 thin strips. (To make ahead, cover and chil until redy to assemble, up to 24 hours.)
- Wrap cheese cubes with prosciutto strips, and wrap shrimp around cubes, securing with wooden picks. Cover shrimp, and chill 10 minutes.
- Whisk together 1/2 cup olive oil and remaining 3 ingredients in a large bowl. (To make ahead, cover and chill until ready to assemble, up to 24 hours.) Add shrimp, and toss. Cover and chill 10 minutes.
