Carrot Cupcakes


Ingredients:

3 cups grated carrots
2 cups sugar
1 1/4 cups oil
4 eggs
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/2 cup chopped nuts (optional)


Directions:

  1. Blend flour, baking soda, cinnamon, and salt.


  2. In another bowl mix sugar, oil, and eggs and blend well. Mix in carrots and then add the dry ingredients and thoroughly blend.


  3. Sppon into paper-lined cupcake tins and bake at 350 degrees for 15 to 20 minutes.
