Rhubarb Pie


Ingredients:

3 cups sliced rhubarb
1 1/2 cups sugar
2 tablespoons flour
2 eggs
1 tablespoons butter
1 teaspoon lemon juice


Directions:

  1. Pour boiling water over the rhubarb and let stand for a few minutes, then drain.


  2. Mix all the other ingredients and stir into the drained rhubarb. Cook in the microwave till it thickens.


  3. Periodically give it a stir as it is cooking. Then pour into an unbaked pie shell and top with pie crust.


  4. Bake at 450 degrees for 10 minutes, then reduce oven to 350 degrees and cook until done (about 45 minutes more).
